About Us

Bubba’s BBQ is a Eureka Springsinstitution, originally founded in 1979 by Bob Wilson, who purchased the location in 1981 and over time expanded and enhanced it (including a beautiful deck added in 2021).

In March 2025, local Eureka Springs native Doug Allen and his wife Pauline assumed stewardship of Bubba’s, bringing with them years of restaurant experience (notably as owners of Jose’s Bar & Grill in Tontitown).

Their vision is to preserve the legendary recipes, formula, and high standard of service that Bob Wilson and his team built — while weaving in elements of the Allen family’s culinary identity.

At Bubba’s, diners can ask about their signature, made-in-house BBQ sauce.

Their commitment extends beyond food — they emphasize continuity in the restaurant’s legacy, as well as active community engagement.
